A variety which is the source of spelt (which should not be confused with oat spelt). A plant genus of the family POACEAE that is the source of EDIBLE GRAIN. A hybrid with rye (SECALE CEREALE) is called TRITICALE. The seed is ground into FLOUR and used to make BREAD, and is the source of WHEAT GERM AGGLUTININS. A hard wheat that is high in GLUTENS and DIETARY PROTEINS. It is used for semolina pasta and BREAD.
